A light fixture (preferably with a fluorescent bulb and switch) is required to adequately illuminate the four compartment sink and preparation area. 2. The wood lined reach -in refrigerator will be painted with two to three coats of low temperature type paint used specifically for coolers. 3. The multi -use of the kitchen walk-in cooler for storage of food and keg beer is not allowed. There is a certain amount of dirt which is brought into the cooler from the outside by the beer salesman's hand truck. Therefore, separate storage is required. 4. Your sink drainboards are quite small. Drinking glasses must have sufficient time to air-dry. When the demand is high for sanitized drinking utensils, it may be ne- cessary to wash, and sanitize drinking utensils in the kitchen dishwashing machine. 5. At the time of the March 5th field inspection, the follow- ing items were completed: (1) a floor sink was installed for the ,jockey box and for the condensate from the refrig- eration equipment (2) the back section of the bar was sealed and painted (3) floor covering and base was in- stalled behind the bar, (4) the drinking glass rack over the bar will be mainly for display purposes. D. There are minor repairs to the existing kitchen equipment such as: missing leg tips on the scullery sink, broken door seals, etc.
