A light fixture (preferably with a fluorescent bulb and <br />switch) is required to adequately illuminate the four <br />compartment sink and preparation area. <br />2. The wood lined reach -in refrigerator will be painted with <br />two to three coats of low temperature type paint used <br />specifically for coolers. <br />3. The multi -use of the kitchen walk-in cooler for storage <br />of food and keg beer is not allowed. There is a certain <br />amount of dirt which is brought into the cooler from the <br />outside by the beer salesman's hand truck. Therefore, <br />separate storage is required. <br />4. Your sink drainboards are quite small. Drinking glasses <br />must have sufficient time to air-dry. When the demand <br />is high for sanitized drinking utensils, it may be ne- <br />cessary to wash, and sanitize drinking utensils in the <br />kitchen dishwashing machine. <br />5. At the time of the March 5th field inspection, the follow- <br />ing items were completed: (1) a floor sink was installed <br />for the ,jockey box and for the condensate from the refrig- <br />eration equipment (2) the back section of the bar was <br />sealed and painted (3) floor covering and base was in- <br />stalled behind the bar, (4) the drinking glass rack over <br />the bar will be mainly for display purposes. <br />D. There are minor repairs to the existing kitchen equipment <br />such as: missing leg tips on the scullery sink, broken <br />door seals, etc. <br />
