During this inspection it was <br />determined that Buzz Inn Restaurant has no treatment system for removing oils and grease from <br />your process wastewater. <br />Buzz Inn Restaurant is required to install a grease removal system. <br />The preferred method of grease removal is a grease interceptor. The interceptor must follow the <br />criteria set forth in the Uniform Plumbing Code, Appendix H, however it must be a minimum size <br />of 750 gallons, have three compartments and a sample port. <br />You may install a grease trap. This trap must be connected to the 3-compartment sink, the pre -rinse <br />sink and the 2-compartment sink located in the kitchen area. The recommended size is a trap that <br />has the rapacity to retain 100 pounds of grease. <br />The City requires that you properly maintain pour grease removal system. If you choose to install a <br />grease trap you will need to implement a regular maintenance schedule for cleaning. The cleaning <br />shall be done weekly and may be performed by restaurant personnel or a contractor specializing in <br />this type of service. You shall keep a maintenance log that includes the date, time and signature of <br />the person performing the cleaning.
