• ORDINANCE NO. 3686 AN ORDINANCE amending Section 9 of Ordinance No. 2730 entitled: An Ordinance relating to the public health and providing for the inspection of animal meats intended for human consumption, regulating and licensing the preparation, handling and sale of such meats, defining offenses, and prescribing penalties for the violation thereof. and adding a new section to be known as Section 16. NOW, THEREFORE, THE CITY OF EVERETT DOES ORDAIN: Section 1: That Section 9 of Ordinance No. 2730 be, and it is hereby amended to read as follows : Section 9: The words "fresh sausage" as used in this ordinance shall be deemed to mean and include only ground veal and/or pork and beef containing no offal or filler and not more than 30% fat. (Heart, liver, tongue and tripe shall be deemed offal within the mean- ing of this section. • "Fresh pork sausage" as used in this ordinance shall be deemed to mean and include only lean pork not to exceed more than 30% back fat. The use of benzoate of soda or sodium sulfite or other preservatives or chemicals, coloring or flavoring shall not be permitted. It shall be unlawful to offer for sale, advertise for sale, sell or dispose of any "fresh sausage" or "fresh pork sausage" which does not comply with the foregoing definitions and restrictions. Section 2: That Ordinance No. 2730 is hereby amended by adding a new section which shall be known as Section 16 and which shall read as follows : Section 16: All meat products, including rabbit, sausage, cooked or uncooked, offered for sale in the City of Everett shall be manufactured and processed in a State or Government inspected factory or in one directly under the supervision of the City of Everett Meat Inspector.
