10/08/2021 <br /> Mr. Bill Stotko RECLEOVE <br /> Pacific Northwest Regional Aerie President OCT 2 1 2021 <br /> 2822 Hoyt Avenue CITY OF EVERETT <br /> Everett,Washington 98201 Permit Services <br /> RE: Everett Eagles Club remodel -10/5/2021 jobsite visit&consultation with Bill Stotko& proposed <br /> Grease trap installation <br /> Bill,as per our jobsite visit on Tuesday, I am submitting these observations&recommendations <br /> regarding the installation of your kitchen grease trap for the referenced project. Per our discussion, it is <br /> my understanding that you are proposing to utilize a Schier GB-50 hydromechanical grease interceptor <br /> that has a capacity of 50 gallons per minute,which is double the capacity of the grease trap the Everett <br /> Eagles club has successfully used in the past. In lieu of the grease interceptor which you propose,The <br /> City of Everett is requesting that the new grease trap meet current code requirements for a commercial <br /> kitchen,which will necessitate the installation of an exterior underground grease trap tank and piping. <br /> You have concerns regarding possible liability from any alterations or modifications to an existing <br /> concrete slab,which, like the Eagles building, is located above the Everett railroad tunnel. in order to <br /> install a new underground grease trap, portions,if not all of the existing concrete slab will need to be <br /> demolished and modified. <br /> Due to the nature of this issue,this is not a typical engineering analysis but is founded on <br /> observations and recommendations based on past engineering experiences,things I discovered during <br /> our recent site visit, information which you have provided me and information gleaned from internet <br /> searches. <br /> I think it prudent to quantify an understanding of the background information which I used in <br /> support of this document. If you feel any of the information is incorrect or needs clarification, please let <br /> me know at your earliest convenience. <br /> A)The FOE#13 Everett Eagles,which has been a part of the Everett community since 1899, is in the <br /> process of remodeling their building at 2822 Hoyt Avenue and the city of Everett is requesting the <br /> grease trap for their kitchen meet current requirements for commercial kitchens. <br /> B) Unlike many commercial kitchens,the Eagle's club kitchen does not operate on a daily basis. Their <br /> typical weekly routine consists of utilizing their kitchen for two dinners(approximately 5-8 total <br /> operation hours) per week. The Everett Eagle's club has operated in this manner for decades, utilizing a <br /> grease trap system with 50%of the capacity of the grease trap they are proposing for this project. <br /> Throughout this time,they have never experienced any issues with its maintenance or operation. <br /> C)A below grade grease trap for this project will need to be located on the west side of the Eagles <br /> building in an area currently occupied by a concrete slab which appears to be 18"+thick. In order to <br /> install a below grade grease trap, portions,if not all of the 18"+thick slab will need to be demolished <br /> and removed to allow for installation and bury of the grease trap tank and associated pipework.
