However, including space noted on the <br /> plan as "retail outdoor dining," it's apparent that use by a food/restaurant is anticipated. So the retail space should be <br /> plumbed with separate drain line capped and marked "grease waste" and routed to an in-ground gravity grease <br /> interceptor. Code requires a minimum 750 gal GI, but we would suggest they install a 1200 or 1500 gal GI. Preparing for <br /> such use with initial construction is preferable to having to require a tenant and/or property owner to saw cut, go <br /> through store front, sidewalk, and excavate for GI installation at a later date.
