It will be <br />in the spot labeled (1). He said there would be floor sinks for 3C and condensate/DW drains. It seems a bit odd workflow <br />wise that they have coffee grinder/maker next to sink but put the DW/sanitizer around the corner. <br />I discussed their operation with him, and with Jeff. Given the menu and plans/practices described, we determined they <br />can be allowed to install the three comp sink with appropriate (indirect) connections, but not install a grease trap <br />initially. He understood that the plumbing must allow for retrofitting a trap on 3C sink drains later if future changes in <br />food service or practices there warrant the requirement. So they may want to maintain some access to a building vent in <br />wall behind sink if/when that need arises. <br />He/architect is supposed to send an updated plan showing the 3C sink.
