All food service equipment must be National Sanitation Foundation <br />(NSF) approved or its equivalent including cutting boards and counter <br />tops. <br />2. An easily cleanable, durable floor surface will be required in the <br />walk-in cooler. <br />3. Walls and ceilings of the walk-in cooler must be constructed with <br />smooth exterior plywood with several coats of low -temperature -type <br />paint. <br />4. Walls and ceiling of the rest:rooms must be constructed of smooth, <br />cleanable, nonabsorbent material. <br />5. Wall surface behind two compartment utensil sink must be constructed <br />of materials that are water resistant, easily cleanable, smooth and <br />durable. <br />6. Handsink in preparation area, restroom and mop sink must he plumbed <br />with hot and cold water through a mix -type faucet. <br />7. Two compartment sink must be a free standing metal with two drain - <br />boards and indirectly connected to the sewage system. <br />8. As long as food products such as the slushie and popcorn machines <br />are in operation, they must be confined to a specific food preparation <br />area accessible to store personnel only. <br />9. Ice machine must be plumbed indirectly to the sewage system. <br />10. Protective coverings should be installed on all lights in the <br />preparation and utensil washing areas. <br />11. If soft ice cream dispensing units are installed, they must be <br />plumbed with hot and cold water through a mix -type faucet. If <br />hard ice cream is served, a running cold water dip well with an <br />indirect drain must be installed. <br />
