During this inspection it wu <br /> detemvned that Town House Restaurant haz no aeatment system for removing oils and grease from <br /> your process wastewazer. <br /> Town Housc Restaurant is required to install a grease removal system. ' <br /> The ideal method of grease removal is a grease interceptor. The interceptor must folfow the criteria <br /> set fonh in the Uniform Plumbing Code,Appendix H,ana must be a minimum size of 750 gallons, <br /> have three compamnents and a saznple port. <br /> You may install a grease trap. This trap must be conneeted to the pre rinse sink and the 3- <br /> compartcnent sink located in the kitchen azea. The recommended siu for this trap is a gease <br /> retention capacity of 70 pounds. <br /> Please note thac the City requires that you properly maintain your greue removalsystem. If you <br /> choose to install a grease trap you will need to implement a regulaz maintenance schedule for <br /> cleaning. The deac�ing shall be done weekly and map be performed by restaurant personnel or a <br /> contractor specialiung m this type of service. You shall keep a maintenance log that includes the <br /> date,time and signature of the personperfom�mg the cleazung.
