<br />Snohomish Health District has reviewed the plans showing
<br />the ventilation hoods to be installed over the chili
<br />ranges and baked potato ovens in the Wendy's stores
<br />number 550655, 550639, and 550637. Although the plans
<br />do not specify fan sizes for exhaust or make-up air,
<br />the installation will be acceptable if the fans are of
<br />suffi.cient strength to provide the velocities indicated
<br />for the filters and make-up air.
<br />The drainboard to be added to the prep sink in store
<br />��550637 must meet the standards of the NaCional Sanitation
<br />Foundation (N.S.F.). The relocation is acceptaUle.
<br />We would suggest thaC the funnel drains on boCh sinks
<br />be located as high as nossible, to prevent spillage over
<br />the top of the funnel. The proposal suUmitted is accept-
<br />able because it does constitute an indirect drain, but
<br />when the top of the funnel is only slightly higher than
<br />the pipe going into the wall, there is an increased
<br />chance of overflow, If this proves to be a vroblem on
<br />the three comparY.ment sink, it might be necessary later
<br />to add funnels on each compartment instead of at the
<br />lower level, or some type of flow restricting devices
<br />might be used.
<br />Snohomish Health District has a plan review charge of
<br />$26.50/hour. Your total time is one hour or $26.50.
