Concrete floora in back <br />half of the establishment must be sealed concrete. <br />Junctures of all walls and flc�ors should be coved and <br />sealed to permit easy cleanin�;. <br />Walls and ceilings of the .food preparation area, equipment <br />and utenail washing areas, and the toilet room shall be <br />light calored, smooth, nonabsorbent and easily cleanable. <br />The nreparation aink and the three compartment acullery <br />aink ahall have the splashboards sealed to the wall. <br />All refrigerated units shall be provided with a numerically <br />scaled thermometer. <br />Hand ainks ehall be accessible to employees at all times. <br />A aupply of hand cleansing soan and hand towels shall be <br />nrovlded. <br />The toilet room ehall be enclosed with a tight-fitting, <br />self-cloaing door.
