All food service equipment must be Iisted by the National Sanitation <br /> Foundation (NSF) for its intended use. Storage refrigerators and <br /> freezers must be listed under standard #7. <br /> 2. Plumbing must meet state and local codes. An indirect waste is <br /> required for the food preparation sink, mechanical dishwasher, ice <br /> machine, running water dipper well, and equipment in which food is <br /> placed. <br /> 3. A dual check valve backflow prevention device is required between the <br /> copper water pipe and the carbonation device. <br /> 4. The ceiling above the food preparation areas must be nonabsorbent, <br /> smooth, and easily cleanable. <br /> 5. Extra wall protection is required on walls behind sinks and food <br /> preparation tables. A 16 inch high backsplash of plastic laminate, <br /> fiberglass reinforce plastic or equal is acceptable. Plastic coated <br /> hardboard is not acceptable. <br /> 6.
