It was mentioned to him that <br />the following would be required: <br />1 - a. The walk-in cooler must be relined with a smooth, <br />nonabsorbent, and easily cleanable material. <br />b. The exposed light bulb must have a shield or <br />guard. <br />c. All broken door seals must be replaced. <br />2. An approved two compartment sink with drainboards <br />is required for scullery work. If the sink is <br />used also for food preparation, the sink must be <br />then plumbed to an indirect drain. <br />3. The Jockey box (ice bin in the cocktail bar) must <br />be connected to an indirect drain. In fact, all <br />food -service equipment suc as: ice makers, food <br />preparation sinks, dishwashers, etc. must be <br />plumbed to an indirect drain. <br />4. At least 20 foot-candles of light is required on <br />working surfaces (food preparation, dishwashing, <br />and cocktail bar sink areas). <br />5. The one compartment stainless steel sink (food <br />preparation area) may be used as a hand -washing <br />sink or as a utensil sink. However, it cannot be <br />used for both purposes. If it is the latter, then <br />a hand -washing sink would be required. <br />6. The kitchen walls must have smooth, nonabsorbent, <br />and easily cleanable walls -- especially to the <br />level of splash. Also, the floors must be coved <br />or have a base. <br />4 <br />
