Equipment specifications must be part of this plan <br />review. <br />b. All food-service equipmeut must meet the National <br />Sanitation Fotmdation standards or its equivalent. <br />2. a. All food-se�vice equipment must be plumbed to indirect <br />drains except the disposer, the hand-washing an mop <br />sinks. <br />b. The two compartment vegetable sink, (item K-15), the <br />three compartment scullery sink (no item number) and <br />all utensil washing sinks must be served by indirect <br />drains. Floor sinks should be used to handle arge <br />volumes of liquid wastes-----especially large two or <br />three compartment sinks. <br />3. Your plumbing schedule shows three handwash stations <br />(items K-26, K-35, & K-38). The hand-washing sinks <br />must be used only for hand-washing----not rinsing <br />utensils or food. Also, the hand wash sink station(s) <br />must be located near the food preparation and dish- <br />washing areas. In addition, the Snohomish Health <br />District does not recommend that hand-washing sinks be <br />an integral part of the Frork counter top. They become <br />invariably utensil sinks. A small porcelain or stain- <br />less steel sink mounted directTto the wall is recom- <br />mended as a hand-washitig sink. . <br />4. a. The type of dishwashing machine (item K-22) is not <br />indicated on your equipment schedule. If the dish- <br />washing machine is a"high" temperaYure machine, then <br />the gas hot water tank (item K-18) should be located <br />closer to the machine. Also, a boost���' heater would <br />be required next to the machine. <br />
