If hard ice cream <br />were to be served, a running water dipper well would be required and <br />frozen dessert machines require plumbing for i.n-place cleaning. <br />A11 equipment installation shall be made with much concern for cleaning <br />equipment. That is, equipment will be raised above the floor tc+ provide <br />easy cleaning beneath or secured to Che fioor to prevent soil seeping <br />beneath; equipment side by side will be spaced apart to make cleaning <br />easy, or abutted and joint sealed to prevent- soil accumulation between, <br />or en such as rollers to allow easy moving for cieaning. <br />From the blue print of the sneeze guard, sheet ��1.
