All food service equipment shall meet the requirements <br />of the National Sanitation Foundation, N.S.F., or <br />equivalent. <br />2. A food preparation sink is required if fresn <br />vegetables a=e prepared as a standard menu item. <br />Sinks used for handwashing or equipment or utensil <br />washing shall not be used for food preparation. <br />3. The ventilation system shall be installed and <br />operated to meet applicable building, mechanical <br />and fire codes. <br />� <br />4. There shall be no direct connection between the <br />sewerage system and any drains origination from <br />equipment in which food is place. The ice machine, <br />and food prep sink if needed, must meet this <br />requirement. <br />5. The toilet room(s) shall be enclosed with tight- <br />- fitting, self.-cl.osing solid doors. The room(s) <br />� shall be mechanically vented to the outside. A <br />toilet room used by women shall have at least one <br />covered waste receptacle. <br />, 6. The handwashing sinks throughout shall be provided <br />' with hot and cold water tempered by means of a <br />mixing valve or combination faucet, hand-cleansing <br />soap and towels. <br />
