The following information is needed prior to further plan review. <br />1. The revised plans now include a handwash sink on the floor plan for the cook line. However, no <br />accessible handwash sink is included on the floor plan for the three -compartment sink and food <br />preparation sink area. An additional handwash sink is required for the three. compartment sink and <br />food preparation sink area and must be shown on the floor plan. A hot case hot holding of tamales is indicated on the submitted HACCP. No not hot hold case is <br />indicated on the floor plan or included on the equipment list. The information submitted September <br />4, 2012 indicates that no hot holding will be done. A revised HACCP must be submitted that <br />includes this change. <br />5. All food service equipment must be listed by the National Sanitation Foundation (NSF) or equivalent <br />for its intended use. The Fogle food preparation refrigerator model #SFLP-59-24 was not found in <br />the current NSF or equivalent listings. This equipment must be replaced with NSF or equivalent <br />listed equipment or documentation must be submitted which demonstrates NSF equivalency. <br />Manufacturer names and model numbers for replacement equipment or equipment documentation <br />must be submitted. Originally submitted manufacturer names and model numbers should be <br />rechecked to assure the information submitted is accurate. <br />6. Submit a revised floor plan, drawn to scale, showing location of all equipment, plumbing fixtures <br />and the like that includes the required additional sinks, equipment and information. The scale of the <br />drg',no mustF be no smaller than '/< eouals 1 foot. Please note that plans may be submitted in an <br />ncorIMi Aformat. Cut sheets and all other information may also be submitted in a PDF <br />format. <br />It is highly recommended that you contact me to set up a date and time to meet at the Health <br />District office to discuss the location of the additional handwash sink for the three -compartment <br />sink and food preparation sink area prior to resubmitting the floor plans.
