The <br /> followin; information is needed prior to further plan review. <br /> ]. A d�scription of the food preparation process (HACCP) for the three anticipated most <br /> popular food items from your menu must be submitted. Please note that one or more of these <br /> items may be a food that is served with each entree such as a soup or salad. Examples for the <br /> HACCP are enclosed. <br /> 2. No designated food preparation sinks are indicated on the flcor plan. Based upon the <br /> submitted menu, both vegetable and raw meat, poultry and seafood prepazation �vill be done. <br /> A food preparation sink is needed for vegetable preparation. Food preparation that inclu.�es <br /> washing or thawing of raw meats requires the installation of a separate food preparation sink <br /> for raw meat preparation. A food preparatiun sink must be installed for vegetable <br /> preparation. A sepsrate food preparation sink must be installed for raw meat, poultry and <br /> seafood preparation. Each sink must have at least one inte�al drainboard. Both i'ood <br /> preparation sinks mus[be shown on the floor plan. <br /> 3. Plumbing letails must be submitted. <br /> 4. Lighting de.aiis must be submitted. <br /> 5. All food service equipment must be listed by the National Sanitation Foundation (NSF) for <br /> i[s intended use. The Coke pop dispenser model # 52-1�22 item #12, the Wells food warmer <br /> model #WEL 21502 item #1�, and the Scotsman icemaker model #400 item #19, were not <br /> found in the cur,ent NSF or equi�alent listings. This equipment must be replaced with NSF <br /> or equivalent listed equipment or documentation must be submitted which demonstrates NSF <br /> equiva:ency Manufacturr.r names and model numbers for replacement equipment must be <br /> submitted. Originally submitted manufacturer names and modei numberr shoufd be <br /> rechecked to assure tUe information submitted is accurate. <br /> 6. No manufacturer name and model number was submitted for the dishwasher item #19. The <br /> manufacturer name and model number for this equipment mus[ be submit[ed. <br /> 7.
