The <br />following information is needed prior to further plan review. <br />1. A description of the food preparation process (HACCP) for the three anticipated most <br />popular food items from your menu must be submitted. Examples for the HACCP is <br />enclosed. <br />2. A grocery area is shown on the floor plan. A list of the grocery items to be sold must be <br />submitted. <br />3. Rice is shown as a menu item. No rice cooker or warmer is shown on the equipment list. The <br />manufacturer name and model number for the rice cooker or warmer and any other counter <br />top food service equipment, such as soup warmers or slicers, must be submitted. <br />4. Food preparation that includes washing or thawing of raw meats under running water <br />requires the installation of a separate food preparation sink for raw meat preparation. Food <br />preparation sinks must be listed by the National Sanitation Foundation (NSF), have at least <br />one integral drainboard and be indirectly drained. A horizontal separation of at least 16 <br />inches or a vertical partition 16 inches in height is required between the food preparation sink <br />and all other sinks and sources of contamination. <br />Please note that prior to opening of the new facility, after the Health District plan review process <br />is completed and construction is finished, the Health District permit application process must be <br />completed and a pre -operational inspection must be conducted. <br />Please contact :ne if you have any questions.
