Protective shields are necessary to <br />protect against breakage. <br />b) A small light fixture with protective shield must be <br />installed under the bar top to illuminate the bar <br />glasswasher, sinks, drainboards and other working <br />surfaces. <br />10) The back section of the cocktail bar must be an enclosed <br />structure so there are no exposed wood supports (sanitary <br />design). <br />11) Finish schedules (floor, wall and ceiling materials) were <br />not given. The following requirements apply to the kitchen, <br />storage rooms, scullery, walk-ins, lounge service area and <br />restrooms: <br />a) The flooring must be smooth, sealed, nonabsorbent and <br />easily cleanable. The floor to wall junctions must be <br />coved. <br />b) The finished wall surfaces must be smooth and easily <br />cleanable. Splashguards (i.e. Kemlite or Glasbord) <br />are recommended behind sinks and food preparation <br />counters. <br />c) The ceilings must be smooth, non -perforated and easily <br />cleanable. <br />12) An employee's locker or storage area away from food supplies <br />must be provided for coats, purses, etc. <br />13) When a restaurant has seventy five seats or more, a non- <br />smoking area is required. <br />14) The food service establishment must also comply with City <br />of Everett Building Department's requirements. <br />15) a) Should there be any major changes and or additions to <br />your layout plans and equipment specifications, you <br />must notify the Snohomish Health District. <br />b) Before an operating permit can be issued, a pre -operational <br />inspection of the completed facility is required.
