All equipment shall meet the requirements of <br />National Sanitation Foundation (NSF) or equivalent. <br />Please submit Che maRe, model number, and type of <br />equipment you are planning to install. <br />B. A food preparation sink is needed. Sinks used foz <br />handwashing or. equipment or utensil washiog shall <br />not be used for food preparation. Submit plans for <br />appro-aal . <br />C. All fixed equipment, the space betcaeen it and <br />adjoining equipment and adjacent walls, shall be <br />not more rhan 1/32 inch or sealed if exoosed to <br />seepage. The large mixer, if it is not readily <br />movable, sh�all be sealed to the floor. <br />D. The sneeze guard at the salad bar shall be mounted <br />so that it directly intercepts the custcmer's mouth <br />and the displayed food at thc "use" position. The <br />vertical distance from the average customer's mouth <br />to the floor shall be considered to be �'ti" to 5'. <br />If you caould like, I coUld stop by when the sneeze <br />guard iG being installed to insure compliance. <br />E.
