Sprague and Lewis: <br />Your layout plans with specifications have been <br />reviewed with the following comments: <br />1) <br />A. All food -service equipment must meet the National <br />Sanitation Foundation standards or its equivalent. <br />This would apply also to refrigeration equipment <br />in the food prep areas (no equipment cut sheets <br />presented). <br />B. All work counter tops must be smooth, free of <br />cracks, nonabsorbent, and easily cleanable. <br />2) <br />A. All food -service equipment must be served by <br />indirect drains (example: floor sinks and funnel <br />rains except refrigeration equipment with <br />built-in evaporators, hand -wash and mop sinks. <br />B. The two compartment scullery sink, ice machine, <br />and the soft drink ice bin must be served by an <br />indirect drain (sheets 8 and 9 of 11). <br />3) Both the employee's restroom lavatory sink and the <br />kitchen hand -washing sink must have towel and soap <br />dispensers. <br />4) Walls must be smooth, nonabsorbent, and easily <br />cleanable. Masonry block walls, even though painted <br />with epoxy paint, are not considered a smooth and <br />easily cleanable finish (sheet 1 of 11). There are <br />wall panels constructed of plastic laminates that <br />may be used to cover the masonry block wall.
