There shall be no direct connections between the sewerage system and any <br />drains originating +rom equipment in which food is placed. <br />2. The ventilation system shail be installed and operated to meet applicabie <br />buiiding, mechanical and fire codes. <br />3. A tood preparation sink is required if fresh vegetables are prepared as a <br />standard menu item. Sinks used for handwashing or equipment or utensil <br />washing shail not be used for food pre�aration. <br />4. The compartments to ihe sculiery sinks must be Iarge encugh to accommodate <br />iF.e cleaning and sanitizing ui ail utensils and equipment that will not be <br />washed in th2 mechanicai dishwasher. <br />5. The Health District operating permit application process must be completed <br />prior to opening for business. <br />if there are any significant changes or additions to your layout or equipment, ihe <br />Snohomish Health Disirict must be notified. <br />A pre•operational inspection is required prior to opening icr business. Please <br />contact the Food Program office about one week in advance to schedule an <br />appointment. This will insure compliance with ihe Rules and Regulations of the <br />State Board of Health for Food Service Sanitation (WAC 248•84). <br />Please do not hesitale to contact me if you have any questions.
