We have applied for a variance to the exterior gravity grease interceptor on a Starbucks renovation on Evergreen Way, and we are now applying for another variance for a Starbucks renovation on SE Everett Mall Way. This existing Starbucks store is one of two tenants in an existing building. The scope of this renovation includes new bar cabinets, some new bar sinks and interior finishes in the seating area. While a good portion of the bar area is being revised (new cabinets), there is limited proposed work in the back workroom area (only rerouting existing fixtures to the proposed HGI). There is no exterior underground work proposed for this renovation. Specifically we are requesting a variance to the exterior gravity grease interceptor requirement. We are proposing to install an interior Schier GB75 HGI trap to connect all plumbing fixtures within Starbucks except the restrooms. See sheet P1102 where we indicate the calculation for the sizing of this HGI. In addition, we will install a discharge mixing valve on the dishwasher to ensure no higher than 140 degrees F discharge water. We are requesting the variance for the following reasons: 1. There is currently no appreciable exterior scope of work for this project and a GGI would require substantial pavement and earthwork. 2. We feel the modifications of the front bar and limited changes to the workroom fall well below the :0% modification of the "kitchen" threshold. ��
