RENS�H - <br />MEGHANIGAL ANU ELECTRICAL OUILDING DESIGN <br />August 18, 2014 <br />Everett Public Works <br />Environmental Qualit� Division <br />Industrial Waste Inspector <br />Attn: Charles Johnstone <br />RE: GRS (Grease Removal System) Variance request for existing Starbucks store <br />located at 515 SE Everett Mall Way, Everett, WA <br />Dear Mr.Johnstone: <br />My company has been engaged to provide a desig� which meets your requirements and <br />we recently designed the new store Starbucks at Broadway and lOth. We have applied <br />for a variance to the exterior gravity grease interceptor on a Starbucks renovation on <br />Evergreen Way, and we are now applying for another variance for a Starbucks <br />renovation on SE Everett Mall Way. <br />This existing Starbucks store is one of two tenants in an existing building. The scope of <br />this renovation includes new bar cabinets, some new bar sinks and interior finishes in <br />the seating area. While a good portion of the bar area is being revised (new cabinets), <br />there is limited proposed work in the back workroom area (only rerouting existing <br />fixtures to the proposed HGI). There is no exterior underground work proposed for this <br />renovation. <br />Specifically we are requesting a variance to the exterior gravity grease interceptor <br />requirement. We are proposing to install an interior Schier GB75 HGI trap to connect all <br />plumbing fixtures within Starbucks except the restrooms. See sheet P1102 where we <br />indicate the calculation for the sizing of this HGI. In addition, we will install a discharge <br />mixing valve on the dishwasher to ensure no higher than 140 degrees F discharge water. <br />We are requesting the variance for the following reasons: <br />1. There is currently no appreciable exterior scope of work for this project and a <br />GGI would require substantial pavement and earthwork. <br />2. We feel the modifications of the front bar and limited changes to the workroom <br />fall well below the :0% modification of the "kitchen" threshold. <br />�� <br />
