With tl�e addition of the following, [hc plans are <br />approved: <br />1. An indirect waste is required for the food preparation sinks, mechanical dishwashers, three- <br />compartment sink, ice machine, ice bins, pop dispenser, wallc-in refrigeration, and any equipment in <br />wl�ich Cood is placed. <br />2. A horizontal separation of at least 16 inches or a vertical partition 16 incltes in height is requireu <br />beriveen the meat preparation sinlc, item #7, and the handwash sinl:, item #7. <br />3. A horizontal separation of at least 16 incl�es or a vertical partition 16 inches in l�eigl�t is reqttired <br />beriveen the handwash sinks and all food preparation areas a�id �vorktaUles. <br />4. The Uandwash sink at tl�e bar, item #17, appears to Ue an under counter unit. Under counter <br />handwaslt si�ilcs are not acceptable. Tlte liandwash sink at tUe bar niust be installed in a marmer that <br />provides proper acces�. <br />5. Water heaters must be of sufficient size to provide hot water to disliwasher and/or scullery sinks and <br />at tl�e same time provide hot water to all handwasli sinks. <br />6. Hot water must Ue available to all liandwasU siiilcs within 15 seco 9�. <br />7. Extra wall protection is required on walls behind all sinks, inclu�ing restri om handwash sinks, and <br />food piaparation counters or taUles. A 16-inch liigh Uacksplash of plastic laminate, fiberglass- <br />reinforced plastic or equal is acceptable. Floor to ceiling protection is required on wall Ueliind <br />dishwashers. Wall protection behind mop sinks must cover the entire splasl� zone. Plastic coated <br />hardboazd is not acceptable. <br />3. The floor must Ue surfaced with a durable, nonaUsorbent, easily cleanable material. <br />9. The ceiline above 'he food preparation areas must be nonperforated, nonabsorbent, smooth, a�td <br />easily cleanable. <br />10. All ]i�ht fixtures in food preparation and storage areas must be provided with covers or sliatterproof <br />Uulbs.�Hot hold unit heat lamps must be provided �vitli shat[eipraof buiUs. <br />I 1. PlumUing must meet state and lacal codes. <br />l3. The ventilation system shall be installed and operated ro meet applicable Uuilding; mechanical, and <br />fire codes. <br />
