All equipment must be National Sanitation Foundation approved or <br />its equivalent, <br />2. All filled donuts and pastry on display that consists in whole or <br />in part of milk or milk products, eggs, ortther ingredients including <br />synthetic ingredients in a form capable of supporting �apid and <br />progressive growth of infectious or tosigenic microorganisms must <br />be refrigerated, <br />3. The three-compartment sink must have drainboards of adequate size <br />provided for proper hundling of soiled utensils prior to washing <br />and for cieaned utensils £ollowing sanitizing. <br />4. The three-compartment sink should be indirectly drained, <br />5. There �hould be installed above the three-compartment sink a utensil <br />drying rack to allow for air drying of all uteneils. <br />6, The Snohomish Health District questions the cantrol of resrroom <br />facilities for this establishment. Repeated sanitation violations <br />will result in establishing a restroom facility in the Uakery area. <br />7. All walls and ceiling finishes must be smooth, nonabsorbent and <br />easily cleanable. <br />8. Floors must be constructed of amooth� no�absorbent� easily cleanable <br />and durable surfaces. <br />9. The mop sink must be plumbed with hot and cold water mix faucet, <br />10. The Snohomiah Health Diatrict questions the amount of refrigeration <br />noted on your layout plane. Some consideraCian.should be given to <br />establishing a walk-in cooler or freezer facility, <br />11.
