The following information is needed prior to further plan <br />review. <br />1. List of equipment noting manufactuier and model number . <br />2. Copy of proposed menu. <br />3. Submit plan review application and plan review fee. <br />The floor plan you submitted indicates a proposed increase of thirry (30) seats for the restaurant. <br />The plan does not indicate u sufficient increase in refrigeration to accommodate the increase in food <br />stora;e, food cold holding and cooling. <br />The inspection records for yoar restaurant show, with the current refrigeration and seating for <br />forty, that there have been difficulties with cooling, cold holding and storage of food. <br />Prior to any approval to increase seating at your restaurant, one of the following is required: <br />1. Install new refrigeration, including a walk-in refrigerator, to meet the proposed increase in <br />food storage, cold holding and cooling requirement. This refrigerator must be Nadonal <br />Sanitation Foundation (NSF) listed. The refrigeration must :ilso be NSF listed for its intended <br />use (i.e. cooling, cold holding, etc.). <br />2. Install addidonal upright refdgerators (NSF listed) of size and number to accommodate the <br />increased volume of food storage and cooling, and install an additional two compartment food <br />preparaaon sink to accommodate proposed additional thawing :uid cooling of foods. (This sink <br />must be NSF listed, have at least one integral drainboard and be indirecdy drained.) <br />Obtain final approvals from all other appropriate agencies (i.e. Everett Building Department, Labor <br />and Industries, etc.). <br />• Healthy Lifestyles, Healthy Communilies • <br />
