An indirect waste is required (nr the mechanical dishwasher, ice machine, running watP dipper wzll, <br />espresso machine and any eq�upmen[ in which footi is placed. <br />3. Nater lieaters rc.ust be of sufficient size [o provide hot warer to dislzwasher ard/or scullery sinks and <br />at uie same time providP ha[ water [o all handwash sinks. <br />4. Hot water mus[ be available to all handwash sinks wi[hin 15 seconds. <br />�. Proper and udequate sneeze protection is required at the front counter. <br />G. The menu indicates you will be serving pre-made sandwiches and salads. All foods must come from <br />an approved source. The source for the pre-made sandwiches and salads must be submitted prior to <br />the pre-operational inspection. <br />7. Extra wall protection is required on walls behind sinks, including restroom handwash sinks, and food <br />preparation counters �nd [ables. A l6-inch high backsplash of plastic laminate, fiberglass-reinforced <br />plastic or equal is ar.ceptable. Ffoor to ceiling protec!ion is required on wall behind dislnvashers. <br />Walls behind mop sinks must coaer the entire splash zone. Plastic coated hardh�ard is not acceptable. <br />3. The floor must be surfaced with a durable, nonabsorbent, easily cleanable material. <br />9. The ceiling above the food preparation areas must be nonabsorbent, smoodi, and easily cleanable. <br />!0. All li�ht fix[ures in food preparation and storaee areas must be provided with covers or shntterproof <br />bulbs. <br />I 1. Pluinbing must mee! state and local codes. <br />12.
