The main hot water to ik for the Champion dishwashing machine <br />will be located on the second floor directly under the <br />dishwashing and scullery areas. The water line from the main <br />hot water tank to the dishwashing machine will not exceed 15 <br />feet. <br />2. All dishwashing, scullery, and food preparation sink drainboard <br />surfaces must be designed as well as cunstructed so as to <br />separate soiled and sanitized utensils, <br />3. The one hand washing sink is well located to serve the dishwashing, <br />rear food preparation and service areas. However, the hand washing <br />sink is not convenient for the food -service employees working <br />in the broiler bar area. Soap and towel dispensers are required <br />at the hand sink. <br />4. Both ovens, broiler, stove, and all other cooking equipment <br />(except microwave) must be ventilated b, an approved hood and <br />duct system. <br />5. The walk-in cooler liner (walls and ceiling) must be smooth, <br />nonabsorbent, as well as easily cleanable. Metal, plastic, or <br />exterior plywood may be used as a liner. However, when exterior <br />or marine plywood is used for the inside liner of a walk-in cooler, <br />the plywood panels must be smooth and sealed with several coats of <br />paint that is especially intended for cold storage rooms where low <br />
