The back section of the cocktail bar must be sealed or <br />enclosed with a smooth, nonabsorbent panel so no 2"x4" or 2"x2" <br />structures are exposed to acctmulate soil and debris. <br />15. Restrooms must be ventilated to the outside air. <br />16. Restroom doors must be self -closing. <br />17. At least 20 foot-candles of light is required on all working <br />surfaceâ–  in the food preparation, dishwashing, scullery, and <br />storeroom areas. <br />18. All openings larger than one half inch in diameter must be <br />sealed in order to make the building as rodent proof as <br />possible. This includes threshold clearance of all doors <br />into the building. <br />19.
