Three-compartment sinks mquired inteeral drainboards at each end. <br />�. �Vater heaters must be of sufficient size to provide hot watcr to dish�vasher and/or scullerp sinks and <br />at Uie same time provide hot water to all hand�v�sh sinks. <br />G. I-Iot water inust be available to all hand�vnsh sinks within 15 seconds. The hot water for the facility <br />must not be used, at mty plumUing fixture, for a minimum of 6 hours prior to the preoperational <br />inspection. This is rcquired so that proper testing of the l�-second time requirement lor hot �vater <br />availability can be completed. <br />7. E�tra wnll protection is required on walls behind nll sinks, including restroom liandwash sitilcs, and <br />food preparatio❑ countcrs and tables. A 16-inch high backsplash of plastic laminate, fiberglass <br />reinforced plastic or equal is acceptable. Wali protection bel�ind mop siiil:s must cover the entire <br />splash zone. Plastic conted hardboard is not acceptable. <br />3. The floor mus[ be surfaced widi a durable, nonabsorbent, easilv cleanaUle material. <br />9. The ceiling above the !'ood preparation amas must be non-perforated, nonabsorbent, smooth, and <br />easil�• cleanable. <br />10. All light lixtures in (ood preparation and storage arcas must be provided with covers or shatter proof <br />bulbs. <br />1 1. Plumbinc must meet statc and local codes. <br />I^_.
