I helicvc this is to become the prep sink mentioncd in <br /> the 1IACCI' food prepnration plan. As such, one compartment will be rescrved for vegetable <br /> preparation, and one sink reserved solely for raw meat/fisl�/shrimp/calamari preparation. A 16-inch <br /> high vcrtical dividcr is required between the two sink compartments to prevent cross contamination. <br /> Likewisc, hvo scparatc hot/cold water spigots will be required, one for each sink. <br /> 2. An additional hand sink is required adjncent to the prep sinks. The one in the dish room is not easily <br /> acecssible and is specificllly dcdicated for workers in the dish room. <br /> 3. Pichup arca: Will any plating of food b�� servers be done in this area? 1 refer to a common practice <br /> whcre servcrs will preparc brcad, salads, chips, desserts, toast etc. If so, a hand sink will be required <br /> in this arca. If all prcparation is donc in thc kitchen, and :he pickup is only for picking up already <br /> platcd ('ood, a hand sink will not bc required. <br /> 4. 13ar Sinks: a dump sink for emptying drinks is ncedcd in the bar. The equipment list shows �165 as a <br /> 3-cotnpartmcnt bar sink. Thc la�out shows four compurtments. Thrce compartments are needed for <br /> proper glass washing, and thc 4" compaiKmcnt could sufficc as the dump sink. Please clarify what is <br /> bcing proposcd. <br /> i.
