Extra wall protection is required on walls behind ull sinks, including restroom handwash sinks, and <br /> food preparation counters and tablcs. A 16-inch high backsplash of plastic laminate, fiberglass- <br /> reinforced plastic or equal is acceplable. A backsplash higher than 16 incltes is required on the wall <br /> behind counter top equipment taller dian 16 inches. Floor to ceiling protec[ion is required on the wall <br /> Uehind dishwashers. Wall protection behind mop sinks must cover the entire splash zone. Plastic <br /> coated hardboard is not acceptable. <br /> 12. The (loor must be surfaced with a durable, nonabsorbent, easily cleanable material. <br /> 13. The cciling above the food preparation areas must be nonperforated, nonabsorbent, smooth and <br /> easily cleanaUle. <br /> 14. All light fixwms in food preparation and storage areas must be provided with covers or shatterpraof <br /> bulbs. Hot hold unit hcat lamps must bc provided �vidi shattcrprooCbulbs. <br /> l�. Plumbing must meet state and local codes. <br /> I6. The vcntilation system shall be installed and operated to meet applicable building, mechanical, and <br /> fire codes. <br /> A prcoperational inspection is required prior to operating permit issuance and approval to open <br /> for business. At the time of inspection, the construcuon af the food service establishment must be <br /> complete and all equipment must Ue in place and in proper operating condition. Incomplete construction <br /> or equipment operation may result in a 5160.00 remspecuon fee. Requests for a preoperationnl <br /> inspection must be received at least one week in advance of the date beiog requested for the <br /> inspection. Contact the Food Program office a minimum of one week in advance to schedule an <br /> appointment for the preoperational inspection. The preoperational inspection will ensure compiiance <br /> with the Rules and Reeulations of die State Board of Health for Food Service Sanitation. <br /> Changes or additions to the approved plans or equipment req ire pre-approval from ihe Snohomish <br /> Hcalth District prior to implementation of the changes. <br /> Please contact me if you havc any questions.
