With the addition <br />of the following items the plans are approved. <br />1) Scullery Room <br />A. The po[ eink should be moved to the dirty dishtable <br />side. You want to have a flow from dirty dishes [o <br />clean without any chance of contamination. <br />B. The pot sink is to have an indirect connection to the <br />sewerage system. There shall be no direct connection <br />between [he sewerage system and any drains originaGing <br />from equipment in which food, portable equipment or <br />utensils are placed. <br />C. A handsink ie needed in this room. With the complete <br />separation of your ycullery room from lhe other work <br />areas of your establishment you do not have a <br />con��eniently located handsink for the employees use. <br />The Rules and Rep,ulations of the S[ate Aoard of Nealth <br />state tha[ "Handwashing facilities .... shall be <br />located to permit convenient use by all employees in <br />food preparation areas and utensil washin areas." <br />(WAC 248-84-040) Please submit proposed location of <br />this handsink. <br />2) Floor covering material to be used was not submitted. Floors <br />shal.l be smooth, nonabsorbent and easily cleanable.
