The Health District operaling pennit application process must be compleled prior lo opcning for <br /> bnsiness. This facilih'�'��� be classified as a low risk food establishment with 0-12 seats. <br /> 3. An indireci a�aste drain is required for the three-compartment sink, mechanical dishw�asher, ice <br /> machine, espresso machinc and any equipment in which food or food contact cquipmcnt is placcd. <br /> 4. Water heaters must be of sufficicnt sizc to providc hot �vater to dishwasher and/or scullery sinks and <br /> at thc same timc providc hot watcr to all handwash sinks. <br /> 5. Hot water must be available to ull hand�vash sinks within 15 seconds. The hot watcr for the facility <br /> must not be uscd, at any plumbing fixlure, for a minimum of 6 hours prior to the preoperational <br /> inspection. This is reqnircd so that proper tcsting of thc 15-second timc requirement for hot H�atcr <br /> availability can bc completcd. <br /> G. All food scrvice equ�nmcnt, both new and used, must be listed by the Nal:onal Sani�ulion <br /> Foiovdalion (NSP) or cqu;��alcnt for its intended use. A backsplash higher than IG inchcs is required on thc �aall <br /> behind counter top eqwpment taller than 16 inches. U'all protection behind mop sinks must cover the <br /> entire splash zonc.
