B. Pretreatment Facilities for FOG: The City shall approve installation of grease <br /> removal and treatment systems. Systems shall meet the following criteria. <br /> 1) All grease traps shall, at a minimum, comply with the requirements of <br /> Section 7 of the UPC. <br /> 2) No dishwashers are to be discharged to grease traps. <br /> 3) Interceptors must meet the requirements of Appendix H of the UPC, <br /> except that the Director may allow for variances, but in no case shall <br /> interceptors be less than 750 gallons. <br /> 4) Interceptors shall have an effluent sampling box approved by the Director. <br /> 5) Users that recycle fats, oils, and grease must utilize a recycling or rendering <br /> service approved by the Director. Users disposing of grease in any other <br /> manner must do so in a way that complies with all applicable State, City, <br /> and Health Department regulations. <br /> Servicing and maintenance of grease traps and grease interceptors where <br /> grease is removed and disposed of must likewise be performed by <br /> recyclers, renderers, or haulers authorized by the Director or in a manner <br /> approved by the Director. Grease which is removed shall not be <br /> discharged into any part of the POTW, any private sewer, any drainage <br /> piping, or storm sewer system. <br /> 6) Other factors may influence the type of pretreatment required. Those <br /> factors include but are not limited to: <br /> If a user is located in a grease problem area; <br /> If there have been past problems (blockages, NOVs, etc.)with a user; <br /> The type of food the users prepares; <br /> Volume of water discharged by a user; <br /> Number of meals a user serves per day; <br /> Adequacy of existing pretreatment equipment; <br /> Use of approved alternate grease removal systems; <br /> Proper implementation of Best Management Practices (BMPs). <br /> 7) Businesses installing additional or alternative pretreatment systems, such as <br /> biological (enzyme) treatment systems must have said treatment systems <br /> approved by the Director prior to installation or use. <br /> The Director is authorized to adopt and publish additional criteria for grease interceptors. <br /> 19 <br />
