Please address the following concerns:
I. Bakery: a food preparation sink shall be installed. This would be for washing fruits used on the
cakes. This is the same as was recently installed in the new Fred Meyer store in Snohomish.
2. Deli: two food preparation sinks are required. One sink is usea for vegetable preparation, one for raw
meat/poultry preparation. I cannot tell from the plans if two sinks are existing or proposed. Two
sinks shall be required.
Sushi Bar: A hand sink is required directly adjacent to the sushi preparation area. The hand sink on
the wall of the deli freezer, next to the freezer door, is over 30 feet from the sushi area. That is not
acceptable as it is not readily accessible.
4. Tully's: are any changes proposed for the Tully's coffee stand other than floor and wall finishes?
When I have received the additional information I can quickly complete the review of the plans.
Please contact me if you have any questions. My office number is 425.339.5250.
Sincerely,
Ray Prnuklin, R.S.
Environmental Health Specialist
Rr/srn
cc: City of Everett Building Department
Layne Harper, R.S., Environmental Health Specialist
