During this inspection it was <br />determined that Alfy's Pizza has no treatment system for removing oils and grease from your process <br />wastewater. <br />Alfy's Pizza located at 9620 - 19`h Avenue SE, Everett is required to install a grease removal system. <br />The preferred method of grease removal is a grease interceptor. The interceptor must follow the criteria <br />set forth in the Uniform Plumbing Code, Appendix K and must be a minimum size of 750 gallons, have <br />three compartments and a sample port. <br />Another means of treatment would be to install a grease trap at the pre -rinse sink. The recommended size <br />of grease trap has a grease retention capacity of 50 pounds. <br />Please note that the city requires that you properly maintain your grease removal system. If you choose to <br />install a grease trap you will need to implement a regular maintenance schedule for cleaning. The cleaning <br />will be done weekly and may be performed by restaurant personnel or a contractor specializing in this type <br />of service. You must keep a maintenance log that includes the date, time and signature of the person <br />performing the cleaning.
