The <br /> following information is needed prior to further plan review. <br /> 1. Responses to the plan review questionnaire indicate that fresh fruit and vegetables will be <br /> washed on site and that raw poultry and red meats will be cleaned and rinsed under running <br /> water. Only one food preparation sink is indicated on the floor plan. Two food preparation sinks <br /> are required; one food preparation sink for the washing and rinsing of fresh fruit and vegetables <br /> and a separate food preparation sink for the rinsing and thawing of raw meats. <br /> 2. Responses to the plan review questionnaire indicate a self-service buffet with both a hot and a <br /> cold buffet display. The menu indicates both a salad bar buffet and a hot buffet. No buffet is <br /> indicated on the floor plan nor is buffet equipment indicated on the equipment list. <br /> 3. The floor plan indicates a three compartment sink with only one drainboard. Three- <br /> compartment sinks must be NSF or equivalent listed with rounded corners and integral <br /> drainboards at both ends. The basins of the three-compartment sink must be large enough to fit <br /> the largest item needing to be washed. <br /> 4. The floor plan indicates a three door pizza prep station, item #22. The equipment list <br /> indicates that item #22 is 2-door refrigerated base pizza prep station. No manufacturer <br /> name or model number is provided. <br /> 5. The handwash sink in the front pizza area is removed from the area of active food <br /> preparation. Relocate the front pizza handwash sink so that it is in the area of active food <br /> preparation. <br /> 6. Submitted recipes indicate a pressure cooker. The menu indicates a Panini grill. Neither is <br /> indicated on the floor plan or the equipment list. <br /> 7. The janitor sink/mop holder, item #48 on the equipment list, and the waitress station, item <br /> #49 on the equipment list, appear to be mis-identified on the floor plan. <br /> 8. A revised floor plan, drawn to scale, showing the location of all equipment, plumbing fixtures <br /> and the like and that includes the required information above must be submitted. The scale <br /> of the drawing must be no smaller than 1/4 inch equals 1 foot. <br /> 9. What is the distance between the kitchen handwash sink and the dishmachine? Handwash <br /> sinks are required within a 20-foot radius of all food service, preparation and dishwashing <br /> areas. <br /> 10.
