I also thank you for taking the time to <br /> visit the location and provide much needed guidance. <br /> In reference to your letter dated October 12,2017, following are the responses: <br /> 1. An additional preparation sink will be installed to ensure preparation sinks dedicated to meats <br /> and fruits/vegetables separately, and in accordance to health requirements. <br /> 2. Self-service buffet will no longer be part of this concept,no such equipment will be available in <br /> the premises. <br /> 3. An NSF compliant three-compartment sink is available on site, architectural drawings will <br /> reflect draining boards as required. <br /> 4. All equipment on site are or will be NSF listed. A complete list of equipment is provided for <br /> your review. <br /> 5. Hand sink in the pizza preparation area is relocated per your guidance,updated architectural <br /> plan reflects the relocation. <br /> 6. Panini will be located next to the service window between the kitchen and the pizza preparation <br /> area, also referred to as service counter, <br /> 7. Mop sink will be located inside the broom closet by the exit to the common area. There will be <br /> no waitress station in the premises,just a cream/sugar and dirty dish return. <br /> 8. Submitted revised plan is resealed as requested to I/4"equals 1 foot. <br /> 9. An additional hand sink was placed in the east side wall of the kitchen, in addition to the one <br /> already placed at the entrance of the kitchen,to ensure that the 20' radius rule is met. <br /> 10. The walk-in cooler's dimensions are 8' wide, 10' long and 10' tall. <br /> 11. As indicated in item#4 above, a complete equipment list is submitted for your review. It shows <br /> an NSF approved equipment list. <br /> 12. Hummus will be purchased prepared and processed for the various vendors we will be using. <br /> No hummus will be prepared from"scratch"in the premises. <br /> 13. Food flows are revised and submitted as requested. <br /> 14. Customer advisory is included in the revised menu as instructed. <br /> 15.
