With the addition of the following, the plans aze <br />approved. <br />.. Plumbing must meet state and local codes. <br />2. An indirect waste is requ'ved fer the food preparation sink, mech:u�ical dishwasher, ice <br />machine, running water dinper well, and equipment in which food is placed. <br />3. A mop sink or utility sink is required. <br />4. The revised floor plan lacks a hand wash sink. A hand sink, centrall,y located and easily <br />accessible, must be installed in the preparation area. <br />�. Extra wall protection is required on walls behind sinks and food prepazation tables. A 16 inch <br />high backsplash of plastic laminate, fiberglass reinforced plastic or equal is acceptable. Plastic <br />coated hardboard is not acceptable. Floor to ceiling protection is requnzd on walls behind the <br />dishwasher. <br />6. A food preparation sink is required. The sink must be listed by the National Sanitation <br />Foundation, NSF, and have at least one integral drainboard. <br />The food preparation sink must be indirectly drained. If all vegetables used are purchased <br />prewashed, a prtp sink is not required. Submit revised fl�or plan showing sink location or <br />letter indicating the use of only prewashed vegetables. <br />8. A horizontal separation of at least 16 mches or a vertical partition 16 inches in height is required <br />between the iood preparation sink and all other sinks. <br />9. The ceiling above the tood preparation areas must be nonabsorbent, smooth, and easily <br />cleanable. <br />I 0. The Hea(th District opemtin� permit application process must be completed prior ro openin� for <br />business. <br />A preoperational inspection is required prior to opening for business. At the time of inspection the <br />construction of ;he food sen�ice establishment must be complete and all equipment must be in <br />place. Incomplete construction may result in :, 5�5.00 reinspection fee. Please contact the Pood <br />Pro�r�m oftice about one week in advance to schedule an appointment.
