With the addition of the following, the plans are <br />approved. <br />l. An indirect waste is required for the food preparation sink, mechanical dishwasher, ice machine, <br />running water dipper well, und equipment in which food is placed. <br />'' A h rizontal separation of at least L6 inches or a vertical partition 16 inches in height is required <br />3. <br />d. <br />0 <br />between the food prepuration sink and all other sinks. <br />Water heaters must be of sufficient size to provide hot water ro dishwasher and/or scullery sinks and <br />at the same time provide hot water to all handwash sinks. <br />All food service equipment must be listed by the National Sanitation Foundation (NSF) for its <br />intended use. The Ice-O-Matic (Mile High Equipment) ice machine #C-AOF-A-P-B wss not found in <br />the current NSF listings. This unit must be replaced with NSF or equivalent listed equipment or <br />documentation must be submitted which demonstrates NSF equivalency. Manufacturer name and <br />model numbers for mplacement units must be submitted prior to the pre-operational inspection. <br />5. Extra wall protection is required on walis behind sinks and food preparation tables. A 16-inch high <br />backsplash of plastic laminate, fiberglass reinforced plastic or equal is acceptable. Floor to ceiling <br />protection is reyuired on wall behind dishwashers. Wall protection behind mop sink must cover the <br />entire splash zone. Plastic coated hardboard is not acceptable. <br />6. All light tixwres in faad preparation and srorage areas must be provided with cuvers or shatterproof <br />bulbs. <br />7. Plumbing must meet st�te and local codes. <br />3. The ventilation system shall be installed and operated to meet applicable building, mechanical, and <br />fire codes. <br />A pre•operational inspection is required prior to opening for business. At the time of inspection the <br />construction of the food service establishment must be complete and all equipment must be in place. <br />Incomplete construction may result in a 3140.00 reinspection fce.
