The plans are approved with clarification <br />given by you on October 13, 1988 when items 1-4 below were discussed. <br />1. Two properly equipped handsinks will be installed in the deli prep <br />area. <br />2. The commercial dishwasher will have a scullery sink with a spray arm <br />installed. <br />3. The ice machine, dishwasher and prep sink are ail indirectly drained <br />to the sewage system. <br />4. A curbed mop sink will be installed in the lavatory. <br />5. The toilet room(s) shall be enclosed with tight-fitting, self-closing solid <br />doors. The room(s) shall be mechanically vented to the outside. A <br />toilet room used by women shall have at least one covered waste <br />receptacle. <br />6. Ths ventilation system shall be installed and operated to meet <br />applicable building, mechanical and fire codes. <br />7. Wood surfaces throughout shall be sealed smooth and easily <br />cleanable. <br />8. Lockers or suitable facilities shall be provided for the orderly storage <br />of employee clothing and belongings. <br />9. All food service equipment shall meet the requirements of the National <br />Sanitation Foundation, N.S.F., or equivalent. <br />
