All food service equipment must be listed by the National Sanitation Foundation (NSF) for its <br />intended use. <br />2. An indirect waste is required for the food preparation sink, mechanical dishwasher, ice machine, <br />running water dipper well, and equipment in which food is placed. <br />3. The food preparation sink must have at least one integral drainboard. <br />4. A horizontal separation of at least 16 inches or a vertical partition 16 inches in height is required <br />between the food preparation sink and all other sinks. <br />5. An additional handwash sink is required. The best location would be at the bar across from the <br />reach in (Item #14). <br />6. Extra wall protection is required on walls behind sinks and food preparation tables. A 16 inch <br />high backsplash of plastic laminate, fiberglass reinforced plastic or equal is acceptable. Plastic <br />coated hardboard is not acceptable. Extra wall protection from Floor to ceiling is required behind <br />the dishwasher. <br />A )r!operational inspection is required prior to opening for business. At the time of inspection the <br />construction of the food service establishment must be complete and all equipment must be in place. <br />Incomplete construction may result in a $55.00 reinspection fee. Please contact the Food Program <br />office about one week in advance to schedule an appointment.
