Have my 30+years but am still too young to retire..We have been short staffed and addressing other <br /> priorities so have not conducted a lot of food service inspections for a while. But this will changing and all are of course <br /> still expected to use BMPs in dish/pan washing, have systems properly maintained, keep records. <br /> A few comments on your plans for new location. First, Note 17 on Sheet A1.0 refers to plumbing drawings, but it is not <br /> included in the plan set. Please provide a plumbing plan. Per the ordinance, it should show"kitchen fixture plan views <br /> and kitchen waste plans showing all potential grease discharging lines, all GRSs,and connecting piping..." Grease <br /> Removal System (GRS) must serve the three comp sink(W/R basins) and your mop sink.The plan should show the <br /> location of the proposed GRS and sizing detail. GRS should be included in Equipment list. <br /> A Schier GB75 should work. However,the unit shown has an older internal flow control (air relief/anti siphon)that does <br /> not allow inspection of flow in or out of the unit.You will need to use a GB75 unit with "Visual Inspection" style of <br /> internal diffuser fittings.See attached image and Note 11 on spec sheet.The existing unit at 4730 Rucker should have <br /> these as well. Floor sinks should have strainers to catch any scraps not scraped/wiped off before pre rinsing. <br /> Lastly,these units have a volume of 125 gallons,and of course take longer to pump than smaller grease traps. Unlike <br /> your other store there is no back door nearby.
