y
Chuck Henderson
From: Charles Johnstone <CJohnstone@everettwa.gov>
Sent: Wednesday,July 31, 2019 11:32 AM
To: Chuck Henderson
Cc: Gene Bennett
Subject: RE: Pizza Hut 036494 10121 Evergreen Way, Suite 23, Everett WA 98204
Attachments: gb_75_spec sheet_open diffusers.pdf; GB75_diffusionflow_air relief-anti siphon-Visual
Inspection jpg
Hello Chuck,
Yes I am still here. Have my 30+years but am still too young to retire..We have been short staffed and addressing other
priorities so have not conducted a lot of food service inspections for a while. But this will changing and all are of course
still expected to use BMPs in dish/pan washing, have systems properly maintained, keep records.
A few comments on your plans for new location. First, Note 17 on Sheet A1.0 refers to plumbing drawings, but it is not
included in the plan set. Please provide a plumbing plan. Per the ordinance, it should show"kitchen fixture plan views
and kitchen waste plans showing all potential grease discharging lines, all GRSs,and connecting piping..." Grease
Removal System (GRS) must serve the three comp sink(W/R basins) and your mop sink. The plan should show the
location of the proposed GRS and sizing detail. GRS should be included in Equipment list.
A Schier GB75 should work. However, the unit shown has an older internal flow control (air relief/anti siphon)that does
not allow inspection of flow in or out of the unit. You will need to use a GB75 unit with "Visual Inspection" style of
internal diffuser fittings.See attached image and Note 11 on spec sheet. The existing unit at 4730 Rucker should have
these as well. Floor sinks should have strainers to catch any scraps not scraped/wiped off before pre rinsing.
Lastly, these units have a volume of 125 gallons, and of course take longer to pump than smaller grease traps. Unlike
your other store there is no back door nearby. I see exhaust fans for oven/fryers on the plan but not in the dish area.So I
would suggest you add active ventilation somewhere near/over the dishwashing area where the GRS will be.This will
help air out the back end when during/after maintenance.
I will notify our plumbing inspectors that we've reviewed your plans and approved with corrections noted.
Thanks for contacting me and please call or reply with any questions or concerns.
Charles
Charles LR Johnstone
Li
Industrial Waste Inspector I Public Works I Industrial Pretreatment
425.257.8240 M 1425.257.8224 D 13200 Cedar St, Everett, WA 98201
EVERETT cjohnstone@everettwa.gov
https://www.everettwa.gov/
From:Chuck Henderson<chenderson@emeraldcitypizza.com>
Sent:Tuesday,July 30, 2019 4:56 PM
To:Charles Johnstone<CJohnstone@everettwa.gov>
Subject: Pizza Hut 036494 10121 Evergreen Way,Suite 23, Everett WA 98204
Charles;
I'm assuming that you are still with the City of Everett as it has been awhile since we have seen each other or spoke on
the phone!
I also assume that Robert Hernandez is keeping you happy with our service levels at the North Everett store.
ift
