<br /> (3) All surfaces with which food or drink Cones in Co n-
<br /> tact are in good repair , free of breaks, corrosion, open seams ,
<br /> cracks and chipped places.
<br /> (4) All display cases, windows, counters, shelves, tables,
<br /> refrigeration equipmnt, stoves, hoods, troughs, , bins , mixing
<br /> machines and other equipment are so constructed as to be easily
<br /> cleaned, and are in good repair .
<br /> The above requirement precludes the use of any type
<br /> of equipment so designed as to permit food or drink routinely
<br /> to come in contact with threaded surfaces.
<br /> In all cases where a rotating shaft is inserted
<br /> through a surface with which food or drink comes in contact,
<br /> the inspector sha 11 assure hims elf that the joint between
<br /> the moving and stationary surfaces is close fitting.
<br /> Item 10. Cleaning and Bactericidal Treatment of
<br /> Equipme nt and Utensils:
<br /> All equipment , including display cases or windows,
<br /> counters, shelves, tables,refrigerators, mixing or moulding
<br /> machines, troughs, racks , bowls, stoves, hoods, sinks, and
<br /> other utensils shall be kept free from dust, dirt, insects, and
<br /> other contaminating material. All cloths used by waiters,
<br /> chefs, bakers and other employees shall be clean. Single-service
<br /> containers shall be used only once,
<br /> All except single service eating and drinking utensils
<br /> shall be thoroughly cleaned and subjected to an approved
<br /> bactericidal process after each usage. All multi-use utensils
<br /> used in the preparation, cooking or serving of food and drink
<br /> shall be thoroughly cleaned end subjected to an approved
<br /> bactericidal process immediately following the days' operation.
<br /> Drying cloths, if used„ she ll be clean and shall be used for no
<br /> other purpose .
<br /> Satisfactory Compliance - A bactericidal process is
<br /> the application of any method or substance for the destruction
<br /> of bacteria which, in the opinion of the Health Officers, does
<br /> not adversely affect the equipment or the food or drink or the
<br /> health of the consumer, and which is effective.
<br /> This item shall be deemed to have been satisfied if:
<br /> (1) All equipment , including display cases and windows,
<br /> counters , shelves, tables, refrigerators , stoves, hoods, troughs, ,
<br /> bowls , and other utensils are ke pL clean and free from dust,
<br /> dirt, insects and other contaminating material.
<br /> (2) All cloths used by waiters, chefs, bakers and other
<br /> employees are clean.
<br /> (3) Single service containers, such as paper cups , plates,
<br /> straws, etc . , are used once only.
