ORDINANCE No. 2-700 <br /> 1 <br /> AN ORDINANCE relating to the public health and providin0 <br /> for the inspection of animal meats intended for human consumption, <br /> regulating and licensing the preparation, handling and sale of <br /> such meats, defining offenses, and prescribing penalties for <br /> the violation thereof. <br /> THE CITY OF EVERETT DOES ORDAIN: <br /> Section 1: DEFINITIONS. That the following words <br /> and terms, as used in this ordinance, shall be deemed and con- <br /> strued to mean and include the following: <br /> (a) The word "MEAT" : All animal flesh, carcasses and <br /> parts thereof, (excluding poultry and game) , designed or intende <br /> for human consumption, or sold or disposed of as human food. <br /> (b) The term "INSPECTED MEAT" : All meat inspected, <br /> passed and approved, and stamped or tagged by a qualified <br /> inspector, which lawfully bears the stamp mark or tag indication <br /> of inspection and approval by the Bureau of Animal industry of <br /> the Department of Agriculture of the united States, or the <br /> Department of Agriculture of the State of Washinaton, <br /> (c) The term "UNCOOKED MEAT" : All meat which has <br /> not been cooked, or cured by smoking, salting, drying, or other <br /> recognized trade process of curing. <br /> (d) The term "CURED MEAT" : All meat which has been <br /> cured by cooking, drying, or other recognized trade process of <br /> curing. <br /> (e) The term "MEAT SHOP" shall include wholesale or <br /> retail meat shops or shops for the manufacture of meat products, <br /> and all premises, buildings and/or parts thereof used for the <br /> preparation for sale , or for the sale or disposition of uncooked <br /> meat, sausage , and/or cooked and cured meats to consumers, but • <br /> in which animals are not slaughtered. <br /> (f) The term "MEAT SALESMAN": All persons selling or <br /> disposing of uncooked meat and/or cured meat and/or sausage to <br /> consumers. <br /> (g) The word "INSPECTOR" : The Health ufficer, or an <br /> of his subordinates designated as "MEAT INSPECTORS OF THE <br /> DEPARTMENT OF HEALTH. " <br /> Section 2: MEAT SHOP LICENSE. <br /> (a) It shall be unlawful for any person, firm or <br /> corporation to open up, conduct, manage , operate or maintain a <br /> meat shop , either wholesale or retail , or a shop for the manu- <br /> facture of meat products without first having obtained a license <br /> therefor. All licenses shall be posted and displayed in a <br /> conspicuous place in said shop. <br />
