k. ICE CREAM: --The term "ice cream" shall be held and con- <br /> strued to mean and include the frozen product made from the com- <br /> bination of milk fat, milk solids and sugar, with or without harm- <br /> less coloring and flavoring matter and pure, wholesome fruits <br /> and with or without the addition of pure gelatine or vegetable <br /> gums, and which shall contain not less than ten per cent. of milk <br /> fats and not less than twenty per cent. milk fats and milk solids <br /> other than milk fat, combined. <br /> 1. COTTAGE CHEESE: --The term "cottage cheese" used in this <br /> Ordinance is the thick part of cultured milk which has been <br /> strained, settled and pressed into a ball or mass, with or wit h- <br /> out the addition of cream. <br /> m. HANDLING MILK: --The term "handling milk", wherever used <br /> in this Ordinance, shall be held and construed to mean and include <br /> any of the processes, operations or transfers through which milk <br /> passes from the time it is drawn from the cow or goat until it is <br /> delivered to the consumer. <br /> n. PASTEURIZATI0I t u.wThe terms "pasteurization", "pasteurized", <br /> "pasteurize" and similar terms, shall be taken to refer to and <br /> mean the process of heating every particle of milk or milk pro- <br /> duct to a temperature of not less than one hundred forty-two and <br /> 50/100 (142.50) degrees Fahrenheit and holding at such temper- <br /> ature for not less than thirty (30) minutes in pasteurization ap- <br /> pliances approved by the Board of Health and the Milk and Food <br /> Inspector of Everett, the time and temperature being automatically <br /> recorded by a temperature and time recording device approved by <br /> the Board of Health and the ailk and Food Inspector; and immed- <br /> iately thereafter cooling to a temperature of fifty (50) degrees <br /> Fahrenheit, or less. <br /> o. ADULTHATED or tIT dHOLES ME MILK:--Adult erat e d or un- <br /> wholesome milk is: <br /> 1: Milk containing less than eight and five tenths (8.5) <br /> per oentum solids other than milk fat. <br />
