8. Three-compartment sinks must have rounded corners and integral drainboards at both ends. The <br /> drainboards of the three-compartment sink must be sloped to the basins. The basins of the three- <br /> compartment sink must be large enough to fit the largest item needing to be washed. <br /> 9. All food service equipment, both new and used, must be listed by the National Sanitation <br /> Foundation (NSF) or equivalent for its intended use. <br /> 10. As of March 1, 2023, food establishments must have at least one certified food protection manager <br /> (CFPM) on staff as evidenced by a valid certificate available from an accredited program (AAA <br /> Food Handler, ServSafe, Learn2Serve, etc.). The certificate must be available upon request. If the <br /> CFPM leaves employment for any reason, the food establishment must have another CFPM on <br /> staff within 60 days. <br /> 11. Plumbing must meet state and local codes. <br /> 12. The ventilation system shall be installed and operated to meet applicable building, mechanical, and <br /> fire codes. <br /> After you have passed your preoperational inspection, the newly installed equipment may be utilized as <br /> part of the approved plans. This facility will remain classified as a high risk food establishment <br /> with 51-150 seats. <br /> It is the responsibility of the food service establishment operator/owner to obtain all necessary <br /> permits and approvals from all applicable agencies. Operating the establishment without required <br /> permits or approvals may subject the operator/owner to legal action by the appropriate agencies. If the <br /> establishment is opened without the Snohomish County Health Department permit issuance, it may be <br /> subject to closure and a double permit fee may be charged. <br /> Changes or additions to the approved plans or equipment require pre-approval from the Snohomish <br /> County Health Department prior to implementation of the changes. <br /> A copy of the Snohomish County Health Department Appeals procedure is available upon <br /> request.
