(A7* 7Q SNOHOMISH <br /> oo COUNTY <br /> HEALTH DEPARTMENT <br /> November 20, 2024 <br /> Jonathan Orozco <br /> Project: Remodel/Revision to Approved Plan, Existing Facility <br /> Subject: Los Novillos Family Mexican Restaurant <br /> Address: 4131 Rucker Ave., Everett, WA 98203 <br /> Dear Jonathan: <br /> After reviewing your plans with the Rules and Regulations of the State Board of Health, and with the <br /> policies of the Snohomish County Health Department, your plans for the revision of Los Novillos <br /> Family Mexican Restaurant have been approved. The approval was based upon the scope of work, <br /> floor plan, and equipment list submitted 08/15/2024 and 11/19/2024. Any changes to the plans without <br /> preapproval from the Health Department will void this approval. <br /> A preoperational inspection is required prior to approval to operate under the new conditions. <br /> At the time of inspection, the construction of the food service establishment must be complete, and all <br /> equipment must be in place and in proper operating condition. Incomplete construction or equipment <br /> operation will result in a $215.00 re-inspection fee. Contact the Food Program office a minimum of 2 <br /> weeks in advance to schedule an appointment for the preoperational inspection. Please review the <br /> following requirements and conditions of operation before scheduling: <br /> 1. Scope of project: Changing the name of the restaurant to Los Novillos Family Mexican <br /> Restaurant and adding a 3-compartment sink and a mop sink. <br /> 2. No food storage or preparation is allowed in the new equipment prior to the preoperational <br /> inspection and approval to open for business. <br /> 3. If deficiencies are observed with your operation that may cause an unnecessary risk to public <br /> health, you may be required to comply with corrective actions by a given due date, regardless of <br /> any approval previously given. This includes, but is not limited to, substitutions or additions to <br /> refrigeration, limiting your menu, or modifying your food handling processes. <br /> 4. Since the food establishment will be in operation during part of the remodel, dust barriers must be <br /> installed to ensure that food protection and safety are not compromised during all applicable phases <br /> of the remodel. The food establishment will be required to discontinue operations if any disruption in <br /> water, electrical, or sewer service occurs, due to the remodel. <br /> 5. Proper handwash stations must be kept accessible and functional during all hours of food service <br /> establishment operation. A handwashing sink must be located: (1) To allow convenient use by <br /> employees; (2) Within twenty-five feet, or as approved, of food preparation, food dispensing, and <br /> warewashing areas; and (3) In, or immediately adjacent to, toilet rooms. <br /> 6. The ceiling above all areas of food preparation, food handling, and dishwashing areas must be non- <br /> perforated, non-absorbent, smooth, and easily cleanable. This includes server stations and front <br /> counter areas where open foods are handled. Light bulbs must be shielded, coated, or otherwise <br /> shatter-resistant in areas where there is exposed food, clean equipment, utensils, and linens, or <br /> unwrapped single-service and single-use articles. <br /> 7.
