Re : Part 2 of the January 26 , 1984 plan review report
,;_T:,':"i for Flakey Jake ' s , Casino Square, 205 East Casino
Road , Everett , Washinp,ton
Dear Mr . Dowen :
Your revised layout plans plue the equipment specifications
(cut sheeCs) have been reviewed with the following comments :
„ 1) As stated previously in my January 26th pinn review
report (item '1) , a secund kitchen hand-wash station
will be required in the area where the milk shake
ard deep fryers are located . This will help cover
the lower food prep and service areas of the
 kitchen.
2) The two new awinq doors , which leads into the
scullery and dishwashing area of the kitchen, impact
both the mear_ room and beer cooler doore . This
could create a transportetion problem, eapeciall;
 during the rueh hours .
; 3) Normally meat rooms are located adjacent to the
; walk-in coolere . The distance from the walk-in
cooler to the meat r.00m will invariably Fubject raw
meats to longer periods out of refrigeration and
higher temperatures . It will he up to the awners
to maintain safe food temueraura . If not, changea
may be required later by the Snohomiah Health Dietrict.
The beer cooler ie not to be used for etorage of prep
foode .
4a) As menCioned in Mr. Cole' s letter of Februery 6th ,
all bakery equipment and utensils will be transported
for weshinR and sanitizing to the kitchen acullery
area . This ie to eliminnte the need of a scullery
sink in the bakery. fiowever if tranAporCation nnd/or
cleanin; of bakery equipment and utensils becomea
a problem ister , then corrective measures will be
required by the health department .
b) The bakery hand-wnsh station is to be used solely
for hand-washing and not for utensile rineinR.
 5) Only frozen dessert machines servinR dairy producte
iare required to have wash kiLR (hot and cold water
faucet on or adjacent to Che machine) . Cven thouh
